This cheese is based on a Gouda recipe and is matured for 6 months to 18 months. The name comes from writings by John Aubrey on Northwiltshiremen in 1656.

They feed chiefly on milke meates, which cools their brains too much and hurts their inventions… their persons are generally plump and feggy, gallipot eyes and some black; but they are generally handsome enough.

    I stumbled upon this cheese whilst looking for a supplier of good yoghurt whilst supplies local to us in N Yorks were disrupted. I chose it because it is long matured and was overwhelmed with delight upon trying it. Gallipot Eyes is a stunningly good cheese, excellent in taste, with a depth that only maturity can bring, and firm in texture. We bought 1kg and are about to buy another kg.
