Cheese is a wonderful upon which you can build some incredibly tasty recipes. We're happy to share with you some of our favourites. A number of chefs have worked with us to create these simple, but tasty meals, all using Brinkworth Dairy cheese.

Wiltshire Loaf and Cranberry Croque Monsieur Triangles


This recipe is simplicity itself but truly festive and delicious. Great with a glass of spiced mulled wine.


Ingredients you will need


8 Thick slices white bread with crusts removed

50g/2oz Brinkworth Dairy salted butter

225g/8oz of grated Wiltshire Loaf

4 tbsp Cranberry jelly


As simple as 1..2..3!


1. Spread the bread with half the butter in the normal way. Top 4 slices of the bread with the grated cheese and spoon on cranberry jelly. Top these four pieces with the remaining bread (butter side down) to make 4 sandwiches.


2. Gently fry the bread in the remaining butter until crisp and golden on both sides.


3. Cut into triangles and serve whilst warm, delicious!



Wiltshire Loaf and Bacon Stuffed Baby Potatoes


This dish is best served from the oven whilst still warm for a really delicious party nibble. Very popular with adults and children alike, especially if they can have some tomato ketchup to dip them into!


Ingredients you will need


20 Medium size new potatoes - boiled

4 Rashers lean smoked back bacon - grilled

125g/5oz  grated Wiltshire  Loaf

50g/2oz Brinkworth Dairy Butter

Pinches Salt

Ground black pepper and nutmeg

1 tbsp Extra virgin olive oil

Sprigs Oregano or flat leaf parsley to garnish


Here's how you make them


Cut the tops off each potato and using a small sharp knife scoop out the flesh.


Combine potato flesh with the butter and cheese using a fork. Season well and stir in the bacon.


Using a teaspoon carefully spoon filling back into the potato shell and top with the potato lids at a jaunty angle.


Brush liberally with the olive oil. Rest in a baking dish lined with baking parchment and cook at 200C/400F/Gas Mark 6 until the filling is golden and the cheese is oozing .... then ENJOY!!
